Level the rinsed rice in the pan, stand the foot on the surface and pour water until it reaches the right notch: 15 mm for jasmine and sushi rice, 20 mm for long grain, 25 mm for brown. Measuring the depth above the rice works for any pan and any amount, which cup ratios never do.
