Slice potatoes deep without cutting through

Lay a potato in the curved trough and slice across it every few millimetres: the knife lands on the two 10 mm rails before it reaches the bottom, so every cut stops at the same depth and the potato stays in one fanned piece. Works for accordion cucumbers and courgettes too.
