Regrow lettuce, celery, spring onions and carrot tops from kitchen scraps

The root ends you throw away will grow again. Stand a lettuce or bok choy stump in the wide dish, a celery base in the shallow one, the white roots of spring onions upright in the tall tube and carrot tops in the small cup, each in a little water. Within days new leaves push up from the middle: spring onions can be cut again in a week, celery grows a new heart and carrot tops sprout feathery greens for pesto. Each well is labelled in its floor.
